Koupepia

Ingredients: vine leaves, onions, pork mince, tomatoes, tomato juice, rice, lemon juice, Half bunch parsley, finely chopped, parsley, Mint, olive oil, Salt, Pepper.

Lountza Dried in the Sun or Smoked

Ingredients: Pork loin, Salt, Pepper, Crushed coriander

Pie with Anari Cheese

Ingredients: anari cheese, Cinnamon, sugar, Rosewater, butter, honey

Sheflalies

Ingredients: minced pork, Salt, Pepper, Cinnamon, onion, parsley, breadcrumbs, panna (caul fat).

Souvlaki , or Pork Kebab

Ingredients: pork without bone (cut in cubes), Salt.

Trachanas Soup

Ingredients: trachana (cracked wheat in soured milk), Halloumi, cheese, Salt.

Pork Afelia

Ingredients: pork, Salt, Pepper, Crushed coriander, wine, oil.

Village Salad

Ingredients: Tomatoes, Cucumbers, Lettuce, Celery, Green peppers, Olives, Olive oil, Salt, Feta cheese.  

Grilled Halloumi Cheese

Cypriot Sweet

A delightful local custom is to welcome guests with the traditional preserved fruit known as “glyko” (sweet) or “gluko tou koutaliou”(sweet of the spoon). Glyko may be prepared using almost any available fruit in season, and even occasionally with some kinds of vegetables.

Glyko figs

Ingredients: figs, sugar, cloves, vanilla 

 

Glyko pears

Ingredients: small pears, peeled almonds, lemon juice, sugar, vanilla 

Glyko grape

Ingredients: grapes, sugar, lemon juice, vanilla, almonds cut in four. 

Glyko Orange  

Ingredients: oranges, sugar, vanilla, lemon juice. 

Glyko Apple  

Ingredients: small apples, sugar, almonds, vanilla 

Glyko Karydaki

Ingredients: fresh walnuts, Lemon juice, sugar, Cinnamon sticks, Cloves.

Glyko Karpouzi

Ingredients: watermelon rind, Lemon juice, sugar, Vanilla.

Kiefterka

A thick, jelly type sweet made from boiled grape juice thickened with a little flour and then dried in the sun. It flavored with rose water, cinnamon and mastic.

Soutzoukos

Soutzoukos is a traditional sweet made from a thick creamy mixture known as “moustalevria”. The mix is made from the boiled juice of grapes and a little flour, flavoured with rosewater,cinnamon and mastic. Almonds are threaded onto a special string that is consecutively dipped into the moustalevria and dried in the sun until the layers build up to produce a long roll approximately one inch in diameter. It is then dried in the sun for several days after which it can be kept for months.

Loukoumades Recipe

Ingredients: flour, mashed potato, Oil, Syrup.
